- x 1 packet diced bacon
- 500 g dried white beans
- x 1 beef stock cube
- x 6 cups of boiled water, add more if needed
- x 2 potatoes
- x 1 onion chopped
- x 1 can diced tomatoes
- x 2 tsp. cumin
- x 2 garlic cloves
- 125 g coriander
Rinse the beans and let it soak overnight.
Cook the beans, beef stock cube and water use a pot with a lid
In a separate pan fry the onion, bacon, tomato, garlic and cumin.
Add the mixture to the pot and add the potatoes and coriander in.
Let it simmer for at least 2.5-3 hours on very low heat.
Mash the soup mixture
Serve with Vetkoek or fresh bread.
