Healthy Green Curry

Ingredients & Method :

  • 1cm peeled ginger
  • x2 chillies finely chopped
  • x1 onion chopped
  • x1 garlic clove
  • 40ml olive oil or coconut oil
  • put this in a blender or mash until it becomes a paste, fry in the pan for about 5min
  • add Black Pepper
  • 250ml Coconut Milk
  • 20ml cumin
  • x4 baby potatoes chopped
  • 10ml turmeric
  • 250ml green peas (frozen)
  • Simmer for 25min low heat
  • Depending what meat you use add meat
  • I am using ostrich that dries out quickly but if you want to use white meat instead
  • add the meat earlier.
  • Then add
  • 20ml freshly squeezed lemon juice
  • 30ml Soy Sauce

 

Serve this dish with Egg Noodles or Basmati Rice
