Easy Home Made Cinnabons

Ingredients (serves 8)

  • Bread dough ( I bought mine ready made)
  • 125g Pecan nuts
  • 15g Icing Sugar
  • 100ml Milk
  • 125g Cream Cheese
  • 2tsp. Vanilla Essence
  • 100g Brown Sugar
  • 3tsp. Cinnamon
  • 130g Melted Butter
  • 4tbsp. Nutella
  • 2 tbsp. Flour

 

Method

Sprinkle flour on flat surface and roll bread dough out, cover it with a cloth and let it rise, double the size. Make sure it is kept warm enough to rise.

While waiting for dough to rise, prepare the filling. Mix butter, cinnamon, sugar and Nutella in a bowl.

Roll dough out and spread filling evenly.

Roll the dough into one big long roll and cut it into small pieces, place in greased muffin pan.

Remember to preheat your oven 180 degrees, place cinnabons in oven for 20 minutes.

While baking the cinnabons, prepare the cream cheese topping

Mix cream cheese, milk, vanilla essence and icing sugar in a mixing bowl, make sure it is smooth enough to be drizzled over the hot cinnabons.

After 20 minutes of baking the cinnabons take them out and pour the cream cheese topping over, drizzle some more cinnamon, icing sugar and pecan nuts over.

Put it back in the oven for another 15 minutes

Serve hot with Vanilla Ice Cream or just as is with a nice cup of coffee.

Healthy Crunchies

Ingredients:

  • 200 g Margarine
  • 500 g oats
  • 250 g Coconut
  • 1 tsp bicarbonate
  • 125 g Xylitol/Sugar
  • 3 tbsp Dates chopped
  • 1 tbsp Sultanas
  • 3 tbsp Honey/Syrup

Method

Melt butter and Honey/syrup

Mix all the dry ingredients in

Remember to grease a baking tray

Flatten your mixture on baking tray

Bake at 180 degrees for 30 min.

Affordable home made patties

Ingredients

  • 500 g Mince
  • x 2 eggs
  • x 2 slices bread / 125 g flour
  • 4 tbsp. sweet chilli sauce
  • 2 tbsp. Steers Mustard
  • Fresh Chives
  • Fresh Coriander
  • Spices of your choice, I like to use dried chilli flakes, black pepper corns and Ina Paarman Veggie spice for more flavour.

Method

Mix all the ingredients in a big bowl.

Shape your patties the size you prefer

Let them stand for 30 minutes in the fridge to set, before frying them.

Serve with lovely fresh toppings of your choice for example caramelised onions, mushrooms, figs, feta, fresh rocket, gherkins, tomatoes, avocado or bacon.

For a healthier option you can serve the patties on a Rye roll like I did in my photo above.

Winter Warm Pie

Ingredients:

  • 500 g Beef Mince
  • 3 tsp Olive oil
  • 250 ml Water
  • x 1 onion (chopped)
  • x 2 Tomatoes (chopped)
  • x 2 tsp Minestrone soup
  • x 2 tsp Brown onion soup
  • x 3 tbsp Chutney
  • 150 g Mushrooms (chopped)

Method:

Add chopped onion and fry until soft and browned

Add Tomatoes

Add Ground beef

Add Chutney, Brown onion soup, Minestrone soup and water.

Add Mushrooms

Simmer for 8 min on very low heat.

Puff Pastry

Ingredients:

  • 150 ml Cold water
  • 250 g Butter ( room temp)
  • 250 g Flour
  • x 2 tsp Salt

Method:

Add all the ingredients in a mixing bowl, mix well

Roll puff pastry out

Add pie in a small ramekin and cover with puff pastry, take egg white and brush over top of puff pastry to get the golden look.

Bake until it is browned 30-45 min.

Creamy Mac & Cheese

Ingredients:

  • x 2 Tomatoes
  • 500 g Macaroni
  • x 3 tsp Butter
  • 150 ml Full cream milk
  • x 6 cups of water
  • x 3 tbsp  Flour
  • x 1 Bunch of chives
  • 500 g Cheese ( Cheddar/Mozzarella)
  • x 4 tbsp Cream cheese
  • x 2 tsp olive oil
  • Salt & Pepper

 

Method:

Boil the water and add a pinch of salt then add the Macaroni in, boil for 6-8 min remove from heat before it gets to soft and soggy. Put Macaroni in a strainer to get all the water out, drizzle olive oil over and mix trough macaroni.

Add milk, flour, butter and x 1 cup of cheese in a pan and melt all the ingredients.

Take the Macaroni and mix it in with the white cheesy sauce, place the mix in an ovenproof dish, the thinner the glass dish is, the quicker it will be ready.

Take the chives and cut them up in small pieces add them over the macaroni dish.

Add the cream cheese

Slice tomato in very thin slices and place on top

Add the rest of the cheese over

Salt & Pepper for taste

Place in oven at 180 degrees for 30-45min until cheese melts
